Ham Fried Rice

This is just plain good!  A favorite of our family for many years. When my son was young he used to torment his sisters. As a distraction I would invite him into the kitchen to "help" me. Making Ham Fried Rice was something we did together. He was good at it and truly enjoyed the cooking process.  He even made this for a demonstration speech in middle school.  It seems only fitting that I end up making it on his birthday, even if he's not home to share it this time.
What you need:

3 cups brown rice, or white, or minute rice
6 eggs
1/2 cup shredded carrots (chopped)
5 to 6 green onions chopped
1/2 cup frozen peas
1/3 cup soy sauce 
3/4 tsp ground ginger

1 1/2 cups diced cooked ham
What to do:
1. Cook the rice.  I prefer to use brown rice and that's what is shown in the picture above. 
I like to use my little AROMA rice cooker it turns out perfect every time. You can follow 
the directions on the rice package and cook on the stove top too.
2. Turn on oven to 325 degrees and spray cookie sheet with cooking spray.

3.  In bowl take the six eggs and mix with wire whisk, until smooth, pour egg on cookie sheet,
     place in oven for 10 minutes, then remove.
4.  While egg is cooking chop shredded carrot, green onion, and ham.

5.  Take large skillet and spray with cooking spray, on medium heat cook carrot, onion, and ham for a couple of minutes.
6.Use your pizza cutter to cut the egg into small bit size pieces,
 making long horizontal and vertical cuts across cooked egg.

7.   Add brown rice and cooked egg that has been cut into small bite size pieces.
8.  Stir in soy sauce ginger mix.
  Now your ready to gather friends or family for a bowl of this delicious rice!
